What is paya, and where can I buy trotters in Bradford?
Ikhlas Halal Butcher
Paya is the Pakistani and North Indian dish of trotters, the feet of lamb, mutton or beef, cooked for six hours or more until the gravy turns rich and gelatinous. You can buy HMC halal trotters in Bradford at Ikhlas Halal Butcher, 26–28 City Road: lamb trotters at £6 per kilo and beef trotters at £6, either left whole or chopped to paya cut. They are cleaned, singed and ready for the pot.

Full trotters or paya cut?
Paya cut means the trotter is split lengthways and chopped through, so the marrow and the gelatin get into the gravy faster and the pieces fit a pot. Full trotters are for people who want to present them whole, or who will split them at home. If you are not sure, take paya cut. It is the same price and it is what most Bradford kitchens ask for.
How many trotters for paya
Lamb: four trotters per adult, so a kilo (roughly 8–10 trotters) serves two to three. Beef: one trotter feeds three to four, and most people add 500g of shin so there is meat as well as marrow. For a Sunday breakfast for eight, buy 3kg of lamb trotters or two beef trotters plus a kilo of shin.
What we do before you get them
Trotters are scalded, the hair singed off, the hooves removed and the surface scraped clean, then rinsed. What you take home is ready for the pot, a wash and they go in. If you want them extra-cleaned or blanched, write it in the order note.

Is paya made from lamb or beef?
Both. Lamb (or mutton) paya is lighter and quicker; beef paya is richer and closer to nihari. Bradford leans lamb.
Are the trotters cleaned?
Yes, scalded, singed, de-hoofed and scraped before they go on the counter.
How long does paya take to cook?
Six to eight hours on the stove, or overnight in a slow cooker. A pressure cooker gets lamb paya done in about ninety minutes.
Do you sell trotters every day?
Yes, lamb and beef trotters are stocked daily. For a large order, say 5kg or more, give us a day’s notice.
