Why choose Ikhlas lamb tail fat?

  • HMC-certified halal: independently monitored and fully traceable.
  • Cleaned and cut to order: prepared from the chiller the day it goes out.
  • The flavour of the tail: the sweet, clean fat that Afghan, Pakistani and Central Asian cooking is built on.
  • A little goes a long way: 250g is enough to render for a week's cooking or enrich a kilo of mince.
  • Yorkshire-sourced: quality British meat from trusted farms.
  • Vacuum-sealed & delivered chilled: freshness locked in from Bradford to your door.
  • Butcher-prepared: cleaned by hand and cut to your preference where possible.

How to cook lamb tail fat

Render it slowly, or mince it into your kebabs.

Render: dice small, heat gently in a dry pan for 20–30 minutes until the fat runs clear, strain and jar it, keeps for weeks in the fridge.

Kebabs / kofta: mince or chop finely and mix 1 part fat to 4 parts lamb mince before shaping.

Pulao / karahi: fry the onions in a spoon of rendered tail fat instead of oil.

Tip: ask for it diced at checkout if it's going straight into mince.

Serving suggestions

Seekh kebabs and chapli kebabs with tail fat in the mince, Kabuli pulao fried in the rendered fat, or a spoon in the karahi.

Nutrition & health

Almost entirely fat, use it as a cooking fat rather than a serving portion. Values vary with rendering.
