Is your lamb HMC certified?

Yes. All lamb sold at Ikhlas Halal Butcher is HMC-certified halal, hand slaughtered and monitored by the Halal Monitoring Committee. You can check our shop on the HMC register at halalhmc.org and see the certificate at the counter.

Which lamb cut is best for karahi?

Lamb shoulder, cut through the bone into curry-cut pieces, is the best cut for karahi. It has enough fat to stay moist over high heat and the bone builds the sauce. Leg is leaner and better suited to roasting or leg steaks.

What is the difference between lamb chops and back chops?

Lamb chops, also called cutlets, come from the rack (the ribs) and have the long bone. Back chops come from the loin and are meatier with a T-shaped bone. Cutlets are the dearer cut for grilling; back chops give more meat for the money.

What does lamb mix mean at a halal butcher?

Lamb mix is a mix of cuts from the shoulder, ribs and neck, chopped through the bone for curry. It is the everyday curry cut: more flavour than a single lean cut, and cheaper per kilo than leg or chops.

How much lamb do I need per person?

Allow 250 to 300g of lamb on the bone per adult for a curry, or 200g boneless. A whole leg of about 2.5kg roasts for six to eight people. For chops on the grill, three to four cutlets each.

Yes. We sell whole and half lamb, cut to your instructions: chops, shoulder, leg, mince, curry cut or left whole for Qurbani. Order online or ring the counter to agree the cutting list.
