How to cook lamb head
Long and slow is the only way.
Siri paya: simmer the head (and trotters) with ginger, garlic and whole spices for 4–6 hours, or pressure-cook for 1½ hours, until the meat falls away.
Roast: after par-boiling, rub with spices and roast at 200°C for 30–40 minutes.
Split or whole: ask for it split at checkout if you want it ready for the pot.
Tip: skin on gives the richest broth; skinless is easier if it's your first time.
