Ingredients

Use fresh, HMC-certified meat. Keep raw and ready-to-eat foods separate.

    Method

    1. Fry onions in oil until deep golden, then add ginger-garlic and whole spices.
    2. Add the trotters and ground spices; sear and coat well for 5 minutes.
    3. Add plenty of water (about 3 litres), bring to the boil, then cover and simmer very gently 3–4 hours until the meat is falling off the bone.
    4. Whisk flour with a little water and stir in to thicken the broth; simmer 15 minutes more.
    5. Finish with garam masala, ginger julienne and coriander; serve with naan.
