How long does fresh meat keep in the fridge? (and what to freeze first)

Whole cuts like these keep the longest. Mince and curry cut should be first into the pot.

Fresh meat from the butcher keeps in a fridge at 5°C or below for: whole cuts of lamb, mutton and beef 3–5 days; steaks and chops 3–4 days; chicken pieces 2 days; mince, keema, curry cut and offal 1–2 days. The rule is that the more a piece has been cut, the more surface it has and the sooner it should be cooked, so cook the mince and the curry cut first, and freeze what you will not use within two days on the day you collect it. This is what we tell customers at Ikhlas Halal Butcher, and it follows the Food Standards Agency guidance.

Fridge times assume the meat goes straight from our chiller to yours. Every hour in a warm car shortens them.

Curry cut has the most cut surface of any product. It goes in the pot within two days.

Why cut meat spoils faster than a joint

Bacteria live on the surface of meat, not inside it. A whole leg has one surface; a kilo of curry cut has hundreds. Mince is the extreme, every particle is surface. That is the whole reason for the table above, and why a butcher will always tell you to cook the keema tonight and the leg on Sunday.

Freezing: do it on day one

If you know you will not cook something within two days, freeze it the day you collect it, not the day before it turns. Split it into meal-sized bags so you only defrost what you need, press the air out, label with the cut and the date. Defrost in the fridge, never on the side: allow overnight for anything under a kilo and 24 hours per two kilos for a joint. Cooked from properly frozen and defrosted, a curry tastes the same as from fresh.

Getting it home

Meat travels well for about an hour in a normal bag; longer than that on a warm day, bring a cool bag. If you collect from City Road on the way to somewhere else, ask at the counter and we will pack it with an ice pack. Delivered orders travel chilled.

Questions people also ask

Can I refreeze meat that has been defrosted?

Not raw. Cook it first, then the cooked dish can be frozen.

Does vacuum packing make meat last longer?

Yes, a vacuum-packed joint keeps roughly twice as long in the fridge. Ask for it at the counter if you are buying for later in the week.

How do I know if meat has gone off?

Smell first, sour or sulphurous means bin it. Then feel: a slimy or tacky surface. Colour on its own is not the test; meat darkens in the fridge without being off.

What temperature should my fridge be?

5°C or below; 1–4°C is ideal for meat. Most home fridges are set warmer than their owners think.
