Halal Assurance
Halal Assurance
100% HMC-certified halal. Every animal is hand-slaughtered and independently monitored by the Halal Monitoring Committee from abattoir to our Bradford counter, and prepared to HMC requirements. Our shop is listed on the HMC website, see our HMC page for what the certification covers.

The tenderloin of the lamb, HMC-certified halal lamb fillet, trimmed and cut fresh to order at our Bradford shop. Very lean and very tender, best cooked quickly and served pink. Sold by the kilo at the same price as our counter. Delivered chilled across Bradford.
Where it comes from. The tenderloin is the small strip of muscle under the spine inside the loin, taken out whole when the loin is boned: no bone, no fat, three or four per animal, the tenderest cut there is.

Why choose Ikhlas lamb fillet?
- HMC-certified halal: independently monitored and fully traceable.
- Cut fresh to order: prepared from the chiller the day it goes out.
- The tenderest cut on the animal: and there is very little of it per lamb.
- Trimmed by hand: silverskin taken off so it is ready for the pan.
- Yorkshire-sourced: quality British meat from trusted farms.
- Vacuum-sealed & delivered chilled: freshness locked in from Bradford to your door.
How to cook lamb fillet
Fillet is lean and has no fat to protect it, so it wants fast heat and a short rest. Overcooked, it is wasted.
Pan: very hot, 3–4 minutes a side for pink, then rest 5 minutes.
Oven: sear all over, then 8–10 minutes at 200°C.
Boti / skewers: cube, marinate, and grill hot and fast, 6–8 minutes, turning.
Tip: take it out of the fridge 30 minutes before cooking, cold fillet cooks unevenly.
Serving suggestions
Sliced thick against the grain with a herb sauce or a simple jus, or as tikka boti off the grill.
