Why choose Ikhlas beef bones?
- HMC-certified halal: independently monitored and fully traceable.
- Sawn fresh to order: from the same carcasses as our steaks and curry cuts.
- Marrow in: the bones that give nihari and yakhni their body and shine.
- Yorkshire-sourced: quality British meat from trusted farms.
- Bagged & delivered chilled: freshness locked in from Bradford to your door.
- Butcher-prepared: ask for marrow bones cracked, or all knuckle for stock, in your order note.
How to cook beef bones
Bones want time. The longer they simmer, the richer the result.
Nihari / yakhni: add the bones with the meat at the start and simmer 4–6 hours; lift them out before serving, or serve the marrow bones on top.
Stock / bone broth: roast at 200°C for 30 minutes, cover with cold water, add onion, bay and peppercorns and simmer gently for 8–12 hours. Skim, strain, chill and lift off the fat.
Pressure cooker: 1½–2 hours gives a good stock when time is short.
Tip: a splash of vinegar in the water helps draw the goodness out of the bone.
Serving suggestions

Frequently asked questions
Are Ikhlas beef bones halal?
Yes. All our meat is HMC-certified halal, independently monitored, prepared by trained Muslim butchers and fully traceable.
Which bones do I get?
A mix of marrow, knuckle and rib bones, sawn into pot-sized pieces. If you want all marrow bones for nihari, or all knuckle for a clear stock, say so in the order note and we will do our best.
Is there meat on them?
A little. They are trimmed bones, not a meat cut. For nihari, buy beef shin alongside them.
How do I make stock?
Roast for 30 minutes, cover with cold water and aromatics, and simmer gently for 8–12 hours (or pressure-cook 1½–2 hours). Strain, chill and skim.
How long do they keep?
Keep refrigerated and use within 3 days of delivery, or freeze on arrival for up to 6 months.
