Why choose Ikhlas lamb trotters?
- HMC-certified halal: independently monitored and fully traceable.
- Cleaned properly: scraped and prepared in the shop, which is most of the work done for you.
- Fresh: prepared the day they go out.
- The traditional paya cut: nothing else gives a broth that body.
- Vacuum-sealed & delivered chilled: freshness locked in from Bradford to your door.
How to cook lamb trotters
Paya is an overnight dish. There is no shortcut, the collagen needs hours to break down into that thick, sticky broth.
Stove: parboil for 10 minutes and drain, then simmer with the masala for 6–8 hours until the broth thickens.
Pressure cooker: 1.5–2 hours at pressure gets you close, though the slow method is better.
Tip: that first parboil and drain is worth doing. It takes away the scum and leaves a clean-tasting broth.
Serving suggestions
Traditionally at breakfast with naan, fresh ginger, green chilli and lemon.
Nutrition & health
Very high in collagen and gelatine, which is what thickens the broth. Little muscle meat.
Cleaned to order, vacuum-sealed the same day and delivered chilled. Keep refrigerated and use within 3 days of delivery, or freeze on arrival for up to 3 months and defrost thoroughly in the fridge before cooking.
Allergens

Frequently asked questions
Are they already cleaned?
Yes. They are scraped and cleaned in the shop before packing, so they are ready for the pot.
How many do I need?
Four trotters make a generous paya for a family. They give more broth than meat, so judge by the pot rather than by appetite.
Is it fresh or frozen?
Cleaned to order and delivered chilled.
