Why choose Ikhlas mutton leg steaks?

  • HMC-certified halal: independently monitored and fully traceable.
  • Cut fresh to order: from the chiller the day it goes out.
  • Cut across the bone on the day: the round of marrow bone stays in each steak for a richer gravy.
  • Deeper flavour than lamb: the cut for a proper curry, not a quick fry.
  • Vacuum-sealed & delivered chilled: freshness locked in from Bradford to your door.

How to cook mutton leg steaks

Mutton leg is lean and well-worked, so it wants time and moisture rather than a hot, fast cook. Brown it, then let it go slowly.

Braise / curry: brown both sides in a hot pan, then cover and simmer gently in your sauce for 1½–2 hours until the meat gives easily from the bone.

Pressure cooker: brown, then 25–30 minutes at pressure with your masala and a little water.

Oven, covered: 160°C for 2 hours in a lidded dish with onions, tomato and stock.

Tip: the marrow in the centre bone melts into the sauce, don't trim it out, and spoon the gravy over the meat when you serve.

Serving suggestions

Mutton karahi or rogan josh with naan; or braised whole with rice and a sharp salad on the side.

Frequently asked questions

Are they on the bone?

Yes, cut across the leg, so each steak carries a round of marrow bone in the centre. Ask for boneless and our butchers will cut them that way.

What is the difference between mutton and lamb leg steaks?

Mutton is the older animal: darker, deeper in flavour and firmer, so it suits a slow braise or curry rather than a quick fry. Lamb leg steaks are the ones for the grill.

Is it fresh or frozen?

Cut to order and delivered chilled.
