Why choose Ikhlas mutton shoulder?
- HMC-certified halal: independently monitored and fully traceable.
- Cut fresh to order: from the chiller the day it goes out.
- Marbled and bone-in: the fat and the bone are what make a mutton curry taste of something.
- Proper mutton: older meat with the depth lamb has not developed.
- Vacuum-sealed & delivered chilled: freshness locked in from Bradford to your door.
How to cook mutton shoulder
Mutton is older meat with more flavour and more connective tissue. It needs longer than lamb, and it rewards it.
Curry: brown, then simmer covered for 1.5–2 hours until it gives way at the bone.
Oven: 150°C covered for 3 hours, then uncovered to colour.
Tip: do not rush it. Mutton that is still tough has simply not had long enough.
Serving suggestions
With rice and a sharp pickle, or slow-roasted and pulled from the bone.
