How to cook beef shin

Shin needs long, slow cooking to become meltingly tender.

Slow-cook / braise: brown, then cook low with stock for 2–3 hours until tender.

Pressure cooker: 30–40 minutes until the meat falls apart.

Tip: the connective tissue melts into a rich, silky sauce, don't rush it.

Serving suggestions

A classic nihari, a rich beef stew, or an osso-buco-style braise.
