Fresh HMC-certified halal chicken breast, pasta cut: our smaller curry cut. Skinless, boneless breast diced by hand into small, even pieces at our Bradford counter, about half the size of our standard curry dice. Small enough to cook through in minutes and sit properly in a forkful of pasta, a wrap or a bowl of rice; big enough to stay juicy. Priced by the kilo, the same as our counter.

How to cook pasta cut chicken
Small pieces cook fast, three or four minutes is usually enough. Hot pan, then straight into whatever it is going in.
Pasta: 3–4 minutes in a hot pan with a little oil and garlic, then straight into the sauce with the pasta.
Quick curry: cook the masala down first, add the chicken for the last 6–8 minutes only.
Fried rice / stir-fry: a very hot wok, 3–4 minutes tossing, then the rice or the vegetables.
Wraps / rice bowls: pan for 4 minutes with your spice of choice, then straight into the wrap or over rice.
Tip: marinate for 20–30 minutes, small pieces take on flavour fast, and it stops them drying out.

Chicken breast diced small, about 1.5 cm, half the size of our standard curry cut. It is the size you want stirred through pasta or rice, where a big cube would be clumsy.
