What is curry cut meat?

Curry cut meat is chopped through the bone into even pieces so everything cooks at the same rate in a karahi, curry or biryani. It applies to chicken, lamb, mutton, goat and beef. Small pieces are about 25g, medium about 40g, large about 60g.

Is curry cut meat HMC certified?

Yes. All curry cuts at Ikhlas Halal Butcher are prepared from HMC-certified halal meat and cut to order at our Bradford counter.

Should I buy curry cut on the bone or boneless?

On the bone for flavour and a richer sauce, especially for lamb, mutton and goat. Boneless for speed, for children, or for dishes like biryani where you want easy pieces. Most Bradford cooks buy on the bone.

Which size of curry cut should I ask for?

Small for biryani and quick karahi, medium for everyday curry, large for slow-cooked dishes like nihari or daal gosht. If you are not sure, say what you are cooking and we will cut to suit.

Fresh, HMC-certified meat cut to order at our City Road shop in Bradford. Collect free, usually ready in about 2 hours, or choose free local delivery within 7 miles (£25 minimum order), delivered 1pm to 4pm or 6pm to 8pm, Monday to Saturday. We don’t post meat outside the area.

Care Instructions

Keep refrigerated at 0–4°C and use within the date on the label, or freeze on the day of delivery. Defrost thoroughly in the fridge before cooking and cook until piping hot throughout. Keep raw meat separate from ready-to-eat food.

How to cook mutton shanks

Shanks need long, slow braising.

Slow-cook / braise: brown, then cook low with stock for 2–3 hours until tender.

Pressure cooker: 30–40 minutes until the meat falls apart.

Tip: braise in stock and spices until the meat falls off the bone.
