Why choose Ikhlas turkey gizzards?
- HMC-certified halal: independently monitored and fully traceable.
- Cleaned properly: split, emptied and the tough lining peeled off before they reach you.
- Very lean, very high in iron: 27g of protein per 100g and only 5g of fat.
- Holds its texture: it will not fall apart in a long braise the way liver does.
- Vacuum-sealed & delivered chilled: freshness locked in from Bradford to your door.
How to cook turkey gizzards
A hard-working muscle, so it starts tough. It needs either a long slow braise or a quick sear, anything in between leaves it rubbery.
Braise: 1½ hours in stock or a masala base until tender.
Fry: boil for 45 minutes first, then slice and fry hard for 3–4 minutes.
Pressure cooker: 25 minutes, then finish in the sauce.
Tip: salt them at the end, not the start. Gizzards tighten up if they are salted before the connective tissue has had time to soften.
Serving suggestions
Braised in a dark onion masala with green chilli, or boiled then fried crisp with cumin and lemon.
