Care Instructions
Care Instructions
Keep refrigerated at 0–4°C and use within the date on the label, or freeze on the day of delivery. Defrost thoroughly in the fridge before cooking and cook until piping hot throughout. Keep raw meat separate from ready-to-eat food.
Halal Assurance
Halal Assurance
100% HMC-certified halal. Every animal is hand-slaughtered and independently monitored by the Halal Monitoring Committee from abattoir to our Bradford counter, and prepared to HMC requirements. Our shop is listed on the HMC website, see our HMC page for what the certification covers.

Shoulder of lamb chopped for the pot, on the bone or boneless, your choice at checkout: sold by weight at the counter price. If leg is the lean one, shoulder is the rich one, fat and connective tissue running right through it, which melts down over a long cook and gives you a gravy with body. This is what most of our regulars order for salan.

Shoulder or leg?
Shoulder is fattier and gives a richer, thicker gravy, but it needs the time. Leg curry cut is leaner and holds its shape better, which is why it suits biryani and anything you want to look neat on the plate.
Curry cut or the whole shoulder?
This listing is the shoulder chopped, priced by the kilo. For the joint left whole to slow-roast, see Halal Whole Lamb Shoulder, sold as one piece of roughly 2kg.
How to cook it
Bone in: brown hard, then simmer covered for 2 hours. Do not rush it, shoulder is tough until suddenly it is not.
Tip: skim the fat off at the end rather than trimming it at the start. It carries the flavour while it cooks.
Cut to order, vacuum-sealed the same day and delivered chilled. Keep refrigerated and use within 3 days of delivery, or freeze on arrival for up to 3 months and defrost thoroughly in the fridge before cooking.
Allergens
A single-ingredient fresh meat product with no added allergens. Prepared in a facility that also handles milk, mustard, celery and sulphites. Please contact us if you have a specific allergy.

Frequently asked questions
Bone in or boneless, which should I order?
Bone in for the richest gravy: the bone and marrow give the salan body over a long simmer. Boneless if you want it neat on the plate or are short of time. It is done in about an hour and a quarter. Boneless is £1 a kilo more, because the bone weight comes out and the boning is done for you.
Is Ikhlas lamb shoulder curry cut halal?
Yes. All our meat is HMC-certified halal, independently monitored, prepared by trained Muslim butchers and fully traceable.
Is it fresh or frozen?
It is cut to order and delivered chilled.
