How to cook lamb intestine
Wash well and simmer long. It turns tender and soaks up the masala.
Prepare: rinse under cold water, rub with salt and lemon or vinegar, rinse again and cut into pieces.
Curry: par-boil for 15–20 minutes, drain, then simmer in your masala for 1–1½ hours until tender.
Pressure cooker: 20–25 minutes after par-boiling, then finish in the sauce.
Tip: a spoon of vinegar in the par-boil water keeps the flavour clean.
Serving suggestions
