How to cook oxtail

Oxtail needs long, slow cooking to release its rich, silky texture.

Slow-cook / braise: brown, then cook low with stock for 2–3 hours until tender.

Pressure cooker: 30–40 minutes until the meat falls apart.

Tip: cook a day ahead and skim the fat for an even richer result.
