How to cook beef intestine

Intestine needs a good wash and a long, gentle cook to become tender.

Prepare: rinse well under cold water, rub with salt and a little vinegar or lemon, rinse again and cut into pieces.

Curry: par-boil for 20–30 minutes, drain, then simmer in your masala for 1–2 hours until tender.

Pressure cooker: about 30–40 minutes after par-boiling, then finish in the sauce.

Tip: a spoon of vinegar in the par-boil water keeps the flavour clean.

Serving suggestions
