Choose skin on for roasting, where the skin bastes the meat and crisps up, or skin off for curries, karahi and marinades that need to soak straight into the meat. Feeds two comfortably and cooks faster than a whole bird.

How to cook half chicken
Cook until piping hot with no pink at the bone (at least 75°C at the thickest part of the thigh).
Roast (skin on): 200°C (fan 180°C) for 45–55 minutes, skin side up, until the juices run clear.
Grill / BBQ: press it flat, marinate, then 20–25 minutes over medium heat, turning twice.
Karahi (skin off): joint it into 4–6 pieces, brown, then cook in the masala for 25–30 minutes.
Tip: score the thigh and drumstick to the bone before marinating so the flavour goes right through.
Serving suggestions
Roast with potatoes and salad, tandoori-style off the grill with naan, or jointed into a karahi.
