Why choose Ikhlas mutton liver?

  • HMC-certified halal: independently monitored and fully traceable.
  • Trimmed by hand: membrane and tubes removed at the counter, so nothing chewy makes it to the pan.
  • Real flavour: mutton liver has the depth that lamb liver lacks. This is the kaleji the older generation means.
  • Counter price online: priced by the kilo exactly as it is on our till.
  • Iron-rich: one of the most nutrient-dense things on the counter.
  • Vacuum-sealed & delivered chilled: freshness locked in from Bradford to your door.

How to cook mutton liver

Everything about liver comes down to not overcooking it. Have the onions and masala ready before the liver goes anywhere near the heat.

Kaleji fry: cubes into a very hot pan with the fried onion and spices, 4–5 minutes, tossing, pink in the middle, then off the heat.

Liver masala: cook the masala down first, add the liver for the last 6–8 minutes only.

Tawa / grill: thick slices, 2 minutes a side over high heat.

Tip: a squeeze of lemon and a handful of fresh coriander at the end lifts the richness.

Serving suggestions

Kaleji with hot naan and sliced onion, a tawa liver with paratha, or a quick liver masala over rice.
