Halal Assurance
Halal Assurance
100% HMC-certified halal. Every animal is hand-slaughtered and independently monitored by the Halal Monitoring Committee from abattoir to our Bradford counter, and prepared to HMC requirements. Our shop is listed on the HMC website, see our HMC page for what the certification covers.

Mutton shoulder chopped for the pot, sold by the 500g, bone in or boneless. Shoulder is the fatty end and mutton is the older animal, so this is the richest thing in the mutton range, a gravy with real body, and meat that shreds rather than cubes once it has had its time.

Shoulder or leg?
Shoulder is fattier and richer but wants the time; mutton leg curry cut is leaner and holds its shape, which is why it suits biryani. Neither is better. They are different dishes.
Mutton or lamb?
Mutton is older. Stronger and more savoury, and it does not get lost under heavy spice, but it needs a longer cook. The lamb shoulder curry cut is the quicker, milder version of the same thing.
Whole or curry cut?
This listing is the shoulder chopped, priced per 500g. For the joint left whole to slow-roast, see Halal Whole Mutton Shoulder, sold as one piece of roughly 2kg.
How to cook it
Bone in: brown hard, then simmer covered for 2½ hours.
Tip: skim the fat at the end rather than trimming it at the start. It carries the flavour while it cooks.
Cut to order, vacuum-sealed the same day and delivered chilled. Keep refrigerated and use within 3 days of delivery, or freeze on arrival for up to 3 months and defrost thoroughly in the fridge before cooking.
Allergens
A single-ingredient fresh meat product with no added allergens. Prepared in a facility that also handles milk, mustard, celery and sulphites. Please contact us if you have a specific allergy.
