The hotter, sharper biryani, more chilli and a sour note behind it. Made in Bradford by Mumtaz and stocked at our City Road counter, so it comes in the same bag as your meat.

Why we stock it
- Made in Bradford: blended by Mumtaz in the same city as the shop.
- One pack, one dish: the whole spice mix for the dish is in the packet, no building a masala from eight jars.
- Consistent: the same result every time, which is hard to manage grinding your own.
- Halal throughout: suitable for a halal kitchen.
- Comes with the meat: add it to a counter order and it goes in the same bag.
How to use it
Same method as a traditional biryani, but the spicing is louder and it can carry a stronger meat.
Spice the meat: yoghurt and masala, at least two hours, overnight if you can.
Part-cook the rice: basmati to about 70%, then drain.
Layer and seal: lid on tight, lowest heat, 25 minutes, then rest before opening.
Tip: a couple of dried plums tucked into the meat layer is the traditional Bombay touch and it is what gives the dish its sour backnote.
Goes well with
Mutton mix on the bone, lamb mix on the bone or chicken leg curry cut.
Ingredients & allergens
The full ingredient list and allergen declaration are printed on the pack. Recipes are set by Mumtaz and can change, so please read the label on the jar or tub you receive rather than relying on this page. Contact us before ordering if you have a specific allergy and we will check the current pack for you.
Keep in a cool, dry cupboard out of direct sunlight. Reseal the pack after each use and use by the date printed on it.

How hot is it?
Hotter than the traditional mix, though still short of a vindaloo. It is sharp rather than punishing.

Is it halal?
Yes. Mumtaz is a halal food producer and the whole range is suitable for a halal kitchen.
Where is it made?
Bradford. Mumtaz have produced from the city for over forty years, which is why we stock them alongside our own counter.
