Keep refrigerated at 0–4°C and use within the date on the label, or freeze on the day of delivery. Defrost thoroughly in the fridge before cooking and cook until piping hot throughout. Keep raw meat separate from ready-to-eat food.

Thick, savoury and properly desi, the handi is the everyday one, closer to what gets cooked at home than to a restaurant menu. Made in Bradford by Mumtaz and stocked at our City Road counter, so it comes in the same bag as your meat.

Why we stock it

How to use it
The sauce is already cooked, so the only real job is getting colour on the meat before it goes in.
Brown the meat: hard, in a little oil, so it colours rather than stews.
Pour it in: one jar to roughly half a kilo of meat, then bring it up to a simmer.
Finish: 20 minutes for chicken, longer for lamb or mutton on the bone.
Tip: use meat on the bone. Handi is a sauce that wants the body a bone gives it, and curry-cut chicken or mutton mix is exactly what it was built around.
