Why we stock it

  • Made in Bradford: blended by Mumtaz in the same city as the shop.
  • One pack, one dish: the whole spice mix for the dish is in the packet, no building a masala from eight jars.
  • Consistent: the same result every time, which is hard to manage grinding your own.
  • Halal throughout: suitable for a halal kitchen.
  • Comes with the meat: add it to a counter order and it goes in the same bag.

How to use it

Karahi is a fast dish. The mix is built for high heat and a short cooking time.

Get the pan hot: a karahi or a heavy wok, oil shimmering before anything goes in.

Tomato and masala: chopped tomato down first, then the mix, cooked until the oil separates.

Chicken last: 10–12 minutes on the bone, less if it is boneless.

Tip: let the oil separate out before the chicken goes in. That split is the signal the masala is cooked and not raw.

Goes well with

A curry-cut whole chicken, chicken leg curry cut or boneless diced leg.

Ingredients & allergens

The full ingredient list and allergen declaration are printed on the pack. Recipes are set by Mumtaz and can change, so please read the label on the jar or tub you receive rather than relying on this page. Contact us before ordering if you have a specific allergy and we will check the current pack for you.

Storage

Keep in a cool, dry cupboard out of direct sunlight. Reseal the pack after each use and use by the date printed on it.

Frequently asked questions

Karahi or balti?

The same mix works for both. Balti is usually a little wetter; a karahi should finish nearly dry with the oil visible.

Can I use it on the bone?

Yes, and it is better on the bone. Curry-cut chicken gives the sauce far more body.

Is it halal?

Yes. Mumtaz is a halal food producer and the whole range is suitable for a halal kitchen.

Where is it made?

Bradford. Mumtaz have produced from the city for over forty years, which is why we stock them alongside our own counter.

Do you deliver?

Order by 12 for the afternoon run, by 5 for the evening run. Or collect free from the shop, usually ready in about 2 hours. We do not post orders outside the area.
