Best for Chicken, lamb and mutton biryani

Why we stock it

  • Made in Bradford: blended by Mumtaz in the same city as the shop.
  • One pack, one dish: the whole spice mix for the dish is in the packet, no building a masala from eight jars.
  • Consistent: the same result every time, which is hard to manage grinding your own.
  • Halal throughout: suitable for a halal kitchen.
  • Comes with the meat: add it to a counter order and it goes in the same bag.

How to use it

Biryani is assembly as much as cooking. The masala goes into the meat layer, not the rice.

Spice the meat: marinate in yoghurt and the masala for at least two hours.

Part-cook the rice: basmati to about 70%, then drain.

Layer and seal: meat below, rice above, lid on tight, 25 minutes on the lowest heat.

Tip: do not stir it once it is layered. The whole point of a biryani is that the top and bottom taste different.

Goes well with

Chicken leg curry cut, diced boneless lamb or mutton mix on the bone.

Ingredients & allergens

The full ingredient list and allergen declaration are printed on the pack. Recipes are set by Mumtaz and can change, so please read the label on the jar or tub you receive rather than relying on this page. Contact us before ordering if you have a specific allergy and we will check the current pack for you.

Storage

Keep in a cool, dry cupboard out of direct sunlight. Reseal the pack after each use and use by the date printed on it.

Frequently asked questions

Traditional or Bombay?

Traditional is the gentler of the two, aromatic, less chilli. Bombay Biryani is sharper and hotter.

Do I need saffron?

Not for this to work, though a little saffron milk over the top layer is worth it if you have some.

Is it halal?

Yes. Mumtaz is a halal food producer and the whole range is suitable for a halal kitchen.

Where is it made?

Bradford. Mumtaz have produced from the city for over forty years, which is why we stock them alongside our own counter.
