How to cook cow feet (paya)

Cow feet need long, slow cooking to release their rich, gelatinous body.

Paya / soup: simmer gently for 4–6 hours until the broth is rich and the meat tender.

Pressure cooker: about 1–1½ hours, then finish on the hob.

Tip: an overnight or all-day simmer gives the richest paya.
