HMC HalalFrozenOn the BoneLocal Delivery

Goat on the bone, diced into chunky cubes and frozen. This is the traditional cut for goat curry, bone, gristle and fat all left in, because that is exactly what gives a slow-cooked curry its depth. Cooked long and low, the bone releases marrow into the sauce and the meat falls apart.

Why choose Ikhlas goat on the bone?

  • HMC-certified halal: independently monitored and fully traceable.
  • Bone left in on purpose: marrow into the sauce is the whole point of this cut.
  • Honest about the bone: the meat yield is lower than a boneless dice, and the price reflects that.
  • Diced from the whole animal: a mix of cuts, the way a goat curry is meant to be.
  • Local delivery: delivered chilled within 7 miles of the shop, or collect free.

How to cook goat on the bone

Goat is lean and worked, so it needs time. Two hours is a minimum, and it only improves from there.

Curry: brown the pieces, then simmer covered for 2–3 hours until the meat leaves the bone.

Pressure cooker: 45–60 minutes at pressure if you are short of time.

Tip: thaw overnight in the fridge, never at room temperature, and cook from properly defrosted.

Serving suggestions

Goat curry with rice and flatbread, or a pepper soup with plenty of scotch bonnet.

Frequently asked questions

How much of the weight is bone?

A good proportion. It is diced from the whole animal, so bone content is naturally high. That is what makes it cheaper per kilo than a boneless dice, and what gives the curry its body.

Why is this frozen when everything else is fresh?

Goat is not butchered daily the way our beef, lamb, mutton and chicken are. Freezing is what lets us keep it in stock year round.

Can I refreeze it?

No. Thaw overnight in the fridge and cook it, do not refreeze once defrosted.
