Mutton or lamb?

Lamb is younger, milder and quicker to cook. Mutton has had time to develop, stronger, more savoury, and it stands up to heavy spicing without disappearing. If you find lamb bland in a slow-cooked dish, this is the reason. Whole lamb legs are here.

Whole leg or curry cut?

This listing is the leg left whole. For the same leg chopped for the pot, see Halal Mutton Leg Curry Cut, sold per 500g, bone in or boneless.

How to cook it

Slow roast: cover tightly and cook at 150°C for 4–5 hours. Mutton needs longer than lamb, do not shorten it.

Raan: marinate overnight in yoghurt and spice, then cook covered until it pulls from the bone.

Tip: score the fat and let the marinade get into the meat. A day ahead is better than an hour.

Freshness & storage

Cut to order, vacuum-sealed the same day and delivered chilled. Keep refrigerated and use within 3 days of delivery, or freeze on arrival for up to 3 months and defrost thoroughly in the fridge before cooking.
