Mutton leg chopped for the pot, sold by weight, bone in or boneless. Leg is the lean end of the mutton, firm, deeply savoury, and the cut that holds its shape through a two-hour cook instead of collapsing. This is what a proper salan is built on.

Mutton or lamb?

Mutton is the older animal. Firmer, stronger, and it does not vanish under heavy spice the way lamb can, but it needs longer in the pot. If you want it quicker and milder, take the lamb leg curry cut instead.

Bone in or boneless?

Bone in for the gravy, the marrow is doing most of the work in a salan. Boneless for biryani, or anywhere nobody wants to be picking bones out of rice.

Curry cut or the whole leg?

This listing is the leg chopped, priced by weight. For the joint left whole to roast, see Halal Whole Mutton Leg, sold as one piece of roughly 2.5kg.

How to cook it

Bone in: brown hard, then simmer covered for 2–2½ hours. Mutton takes longer than lamb; that is the whole bargain.

Boneless: around 1½ hours.

Tip: a pressure cooker halves it, but the gravy is better if you give it the time.
