Halal Assurance
Halal Assurance
100% HMC-certified halal. Every animal is hand-slaughtered and independently monitored by the Halal Monitoring Committee from abattoir to our Bradford counter, and prepared to HMC requirements. Our shop is listed on the HMC website, see our HMC page for what the certification covers.

Leg of lamb chopped for the pot, sold by the 500g, bone in or boneless. Leg is the leanest of the stewing cuts, less fat than shoulder, so it holds its shape in a salan and does not go greasy. Bone in for the flavour and the marrow, boneless when you want it easy to serve.

Curry cut or the whole leg?
This listing is the leg chopped for cooking, priced per 500g. If you want the leg left whole to roast, that is Halal Whole Lamb Leg, sold as one piece of roughly 2.5kg.
Bone in or boneless?
Bone in gives a deeper, richer gravy, the marrow does the work and it is what most of our customers order for salan. Boneless is quicker to cook and easier at the table, and it is the one to pick for biryani where nobody wants to be picking bones out of rice.
How to cook it
Bone in: brown, then simmer covered for 1½–2 hours until it pulls off the bone.
Boneless: 45–60 minutes is usually enough.
Tip: brown it hard and in batches. Crowding the pan steams the meat instead of colouring it.
Cut to order, vacuum-sealed the same day and delivered chilled. Keep refrigerated and use within 3 days of delivery, or freeze on arrival for up to 3 months and defrost thoroughly in the fridge before cooking.
Allergens
A single-ingredient fresh meat product with no added allergens. Prepared in a facility that also handles milk, mustard, celery and sulphites. Please contact us if you have a specific allergy.

Frequently asked questions
Why leg rather than shoulder for biryani?
Leg is the lean cut, so the pieces hold their shape through the layering and steaming instead of falling apart. Shoulder is richer but breaks down, better for salan than biryani.
Is Ikhlas lamb leg curry cut halal?
Yes. All our meat is HMC-certified halal, independently monitored, prepared by trained Muslim butchers and fully traceable.
Is it fresh or frozen?
It is cut to order and delivered chilled.
How long does it keep?
Keep refrigerated and use within 3 days of delivery, or freeze on arrival for up to 3 months.
