Is your mutton HMC certified?

Yes. All mutton at Ikhlas Halal Butcher is HMC-certified halal, hand slaughtered and independently monitored by the Halal Monitoring Committee, from the abattoir to our counter at 26-28 City Road, Bradford.

What is the difference between mutton and lamb?

Mutton is sheep over about a year old; lamb is under a year. Mutton has a deeper, stronger flavour, more fat and firmer meat, and needs a longer cook. Lamb is milder and quicker. For karahi, daal gosht and biryani many cooks prefer mutton.

Which mutton cut is best for curry?

Shoulder and neck, chopped through the bone, are the best mutton cuts for curry. They carry the fat and bone that a slow-cooked mutton curry needs. Leg is leaner and better for roasting or for a drier bhuna.

How long does mutton take to cook?

Mutton curry needs 1.5 to 2.5 hours on a low simmer, or about 35 to 45 minutes in a pressure cooker, until the meat is tender and leaving the bone. Rushing it is the usual reason mutton comes out tough.

What is mutton paya?

Paya are trotters, slow-cooked for hours until the gelatine turns the broth thick and rich. We sell mutton paya cleaned and split, ready for the pot. Allow one to two trotters per person.

Care Instructions

Keep refrigerated at 0–4°C and use within the date on the label, or freeze on the day of delivery. Defrost thoroughly in the fridge before cooking and cook until piping hot throughout. Keep raw meat separate from ready-to-eat food.

How to cook mutton & beef mince

Treat it as you would any good mince, but give it a little longer than beef alone, the mutton wants the extra time.

Keema: fry hard to colour, then simmer in the sauce for 30–35 minutes.

Kofta or burgers: bind with onion and herbs, then grill or pan-fry 10–12 minutes, turning once.

Tip: brown it in batches. A crowded pan steams the mince grey instead of colouring it.

Serving suggestions

Keema with peas and rice, or as a samosa and kofta filling.
